Garlic and olive oil is a perfect combination for pasta sauce. This sauce is simple and very aromatic. You can do it any time you need and it won’t require any tricky ingredients. As olive oil is a basic ingredient and it plays a major part in the recipe, we recommend using extra virgin olive oil as it is the most fragrant and beneficial. The quality of other ingredients of garlic and olive oil pasta sauce influences the taste of your pasta greatly as well.  Try to choose fresh plump garlic cloves with no brown spots and soft sides. Parsley adds to this recipe not only a wide variety of vitamins and other microelements essential for our health, but also a unique flavor and taste. Try to use fresh garden parsley while making the sauce.


Garlic and olive oil pasta sauce recipe for 1 pound of pasta


  • ½ cup olive oil, extra virgin
  • 5-6 cloves of garlic, peeled and chopped finely
  • ½ cup of fresh parsley, chopped
  • ground pepper and salt to taste


Heat the olive oil over medium heat in some saucepan. Add the chopped garlic into the olive oil and stir fry till it becomes golden brown. Though be cautious not to burn it. Remove the olive oil with garlic from heat and add the parsley, ground pepper and salt. Your pasta should be ready by this time, so immediately pour the hot sauce over it and toss it well. It is important to cook the pasta in advance so that the sauce stays hot. Avoid reheating the sauce.


If your want your sauce to have more complex flavor, try to add some complementary ingredients. To make the taste of your sauce more spicy add some chili flakes. Adding leafy green vegetables and especially arugula is a perfect choice as they go wonderfully with olive oil pasta sauce. And of course we can hardly imagine pasta without grated Parmesan cheese. It makes the texture of pasta creamy and adds a distinct flavor.
